Legeimat or also known as Luqaimat is sweet emirati dumpling. A middle eastern version of donuts, it is served with date molasses and sprinkled with some seasame seeds.

Its been now ten years living in UAE. Its a second home far away from home. Though this transition to calling it a second home has been very long. But today I love its beauty, heritage & culture, the dessert summers, security and the way it merges all the communities & cultures of the entire world but still keeping alive its own tradition & culture.
Today also my beautiful second home still amazes me in many ways.Every now & then this country reminds me why people are so attracted to this country. Though the main attraction about this country is it  changes one’s destiny Rags to Riches. But I personally feel the main reason people are attracted is because of acceptance & tolerance level by the local people here. And the security it provides without any distinction between color , race or religion.

My first encounter with UAE culinary adventure began during the season of grand Dubai shopping festival  with paper like thin bread called Ragaag (somewhat like crepe) & Le ge matt ( A kind of Indian Gulgula,), majboos or foogah. Due to its multicultural ethnicity, many other mid eastern (Levant) like the Shawarmas, Hummus, Basboosa, Baklawas, Manakeesh,  have been adopted in this region. There are two main spice mix used throughout middle east. Zaatar & Bzar /Baharat You can do so much with them. Every region in mid east has its own recipe. The main difference is  in the proportions of ingredients used. Zaatar is a mixture of three main spices Thyme, Sumac & sesame seed (lightly toasted) & sometimes salt. But the best of all I like is the Palestinian zaater. During this DSF, I was so lucky to get a jar of  palestinian zaater & olive oil (farm fresh).
But today I am sharing with you the sweet delicacy Legeimat. These little dumplings of dough  are served hot with Date molasses or  sometimes honey , sprinkled with seasame seeds. Just pop them hot in your mouth & you will want more. The recipe of Legeimat is very simple and shown in step by step for better understanding
Serves: 5 – 6
Ingredients
I
1 cup flour
1/4 cup milk powder
1 tbsp instant yeast
1/2 tsp baking powder
1/2 tsp sugar
II
1/2 cup water
1/2 tsp oil
2 tbsp of  1 small size whipped egg
III
4 -5 tbsp Dates Molasses or Honey
1 tbsp of seasame
Method
  1.  Mix all the dry ingredients (I)
  2. In a bowl mix all the wet ingredients (II)
  3. Add the wet ingredients to the dry mixture to form a   sticky gluey dough.
  4. Cover with cling film & keep aside for 1 hour
  5. After an hour you will notice the bubbles formed on the dough. Mix again
  6. Heat the oil at medium temperature & drop in little  dough. It will pop up as soon added to hot oil. Keep the flame at medium.
  7. Fry till golden brown. Remove in a serving plate
  8. Pour over date molasses or honey
  9. Sprinkle seasame & serve hot.
