Oatmeal Banana cake is yumminess overloaded with flavors of nutmeg,  coffee & coco.A simple cake to be enjoyed for breakfast with your cuppa of coffee.

Banana Oatmeal cake

I feel baking a cake should be simple and enjoyable. No complicated methods. Just mix everything  and pour over in the pan & ready for baking. One of my favorite method of baking a cake is mixing wet ingredients with dry and the batter is ready to get into the oven to bake. Ultimate Chocolate Brownies

This recipe is from the book 500 Best Ever Cakes & Bakes by Martha Day.I fell in love with this book on first sight. This was the first cookery book purchased by me from the tuition which I used to take during my college days & thus very close to my heart. It covers cookies, bars, biscuit, pies, celebration cakes & all the basics of cake decorating. You name it  & it has.

This booked has helped me lot in honing my baking skills. All the recipes given there gives excellent result.

When I was getting married I gave away all the books I had to my sisters & cousins. But not  this book. Sorry dears I am not ready or ever will be to part with it.
 Sorry guys I am going gaga over this book.  I have an too much emotional attachment to it. 

 
I don’t mind even being called crazy by my HB when he sees me reading recipes from the book from time to time ( which is often).

Now back to the recipe.

Make 12 pcs.
Ingredients:

175 gm or 3/4cup butter
40 gm / 6 tbsp cocoa power (I use HINTZ)
2 eggs lightly beaten
175 gm / 1 cup soft light brown sugar
1/2 tsp vanilla essence
1 cup chopped pecan/almond/walnut
50 gm or 1/2 cup self raising flour
Cherries to decorate (opt)
Icing sugar to sprinkle (opt)
 
 
METHOD: 

 
 
  • Preheat the oven to 180 degrees C .Grease or line the tray.
  • Melt butter and stir in cocoa powder.Set aside to cool
  • When cool add in chopped nuts (I used almond)
  • Beat together sugar, eggs and vanilla essence
  • Fold in the sifted flour
  • Pour the mixture on the greased tray and bake for 20- 25 minutes.(Depends on your oven) , until risen
  • Do the skewer test.When done remove from the oven.( The mixture will be still be quite soft and a little wet., but it cooks further while  cooling).And leave it to cool in the tray.
  • When cool cut into squares and sprinkle icing sugar or powdered sugar & garnish with cherries. 

Strawberry Coffee Cake

Ingredients:
100 gm plain flour
1tsp Baking powder
120 gm sugar + 2 tbsp + 3 tbsp sugar for the the crumble
1 tbsp  + 1 tsp vanilla extract
75 gm unsalted butter + 1 tbsp butter (chilled)
1/4 tsp salt
1 cup fresh or frozen strawberries (I used frozen)
1/4 cup milk
2 tbsp ground almonds (opt)
Icing sugar to dust (Opt)

Method:

  1. Line the bottom of 7″ inch spring form pan with parchment paper. And grease the sides with butter  & flour
  2. Preheat the oven to 200 degrees.
  3. Mix in together 3 tbsp sugar , 1 tsp vanilla and 1 tbsp chilled butter till it form crumbs. Refrigerate. 
  4. Place strawberries with 2 tbsp sugar in a food processor. Use the chopper blade. Pulse 3 times. We want the chunky pcs not the puree.Refrigerate.
  5. Sieve & mix together flour , BP & salt
  6. Now we will start making the batter. Start by beating the butter & sugar till light & pale.
  7. Mix in vanilla extract.
  8. Add the eggs alternating with the flour. Scrape down the sides of the mixing bowl from time to time.
  9. Add in the milk until combined.
Assembling & Baking:
  1. Pour a thin layer of the batter  on the greased pan.
  2. Spread the prepared strawberries leaving 1/2 inch from the sides.
  3. Pour over the remaining batter in dollops
  4. Now sprinkle the prepared sugar topping with ground almonds.
  5. Bake for 45 minutes @ 200 degrees.Insert the toothpick to check.
  6. Let it cool in the pan for 10 minutes before removing from the tin.
  7. Sprinkle icing sugar (optional) before serving.
