Daily preparing sweets  during ramadan becomes very hectic and I feel short of ideas. During these times this Chocolate Banana Cake  comes to my rescue.You guys must be wondering why I am preparing sweets daily. Now as it is ramadan and a month of giving and blessing, we give away iftar to few people daily. So the menu is quite large. Though I prep myself before ramadan, but sweets I cannot freeze. Now as ramadan is nearly ending, more of my time is spent on ibadat, so keep the menu of these quick cakes and other sweet for the last ten days.

No friends , I am not  on a baking spree. The thing is I have too many baked stuff in my drafts from last year. And wanted to share my best creation so far . Last year in December the day after the UAE national day, hubs had gone to Sowwah Square Abu Dhabi for some work.  In the events of national day celebrations Magnolia Bakery was sharing their little wonder cupcakes with the visitors of the mall. And on returning back, he could not stop raving about  cupcakes along with its icing. According to him this was far by best cupcakes he had eaten. 
Well,Magnolia Bakery. A very familiar name. My mind started tinkling , where I had heard this name. My blocked mind was unable to remember where I had last heard this name. So had to take the help of Google Maharaj ( my ever faithful friend who never disappoints me)
The name that popped up in the search was Sex & the City.
Ohh, kk. Now everything came back like a flash.For those who are not aware , the two characters of this serial were pictured raving about the magnolia bakery cupcakes. And this had created a craze for this cupcakes in 1990’s. Magnolia bakery had opened its first branch in UAE, at the Galleria Sowwah, now also at Dubai Mall.

My Google search also led me to the recipe too, which this bakery has shared with their fans. And here is my creation to it. Though  they have opened their branch in Dubai, I have still not visited this bakery. Its on top priority now.Till then , I will just enjoy my creation.

I have halved the entire recipe along with the frosting. Makes around 12 cupcakes.

Ingredients (Source: Magnolia Bakery)

For the cupcakes
95 gm self rising flour
80 gm all purpose  flour
115 gm unsalted butter cut into cubes
1 cup sugar
2 large eggs @ room temperature slightly whipped
1/2 cup milk
1/2 tsp vanilla extract

For the frosting
170 gm butter unsalted & soft
315 gm powdered sugar (sieved)
1 tbsp milk
1 tsp vanilla extract
drop of pink color

Method:

  1. Preheat the oven @180 degrees for 10 minutes
  2. Mix & sieve self rising & all purpose flour. Mix in butter & pulse twice in a food processor  till you get the sandy texture
  3. Now mix in the slightly whipped eggs followed by milk & vanilla.
  4. Mix till all blended.
  5. Pour a scoop of the batter in cupcake liner & bake for 14 – 15 minutes till done.
  6. When done it will bounce back on touching.
  7. Completely cool
Vanilla Butter Cream Frosting
  1. Beat butter till pale & creamy.
  2. Add in rest of the ingredients.
  3. Add the drop of color.
  4. Use accordingly
Notes:
  • I have used food processor for preparing cupcake. Use of beater is also fine.
  • This cupcakes tastes delicious with frosting.
  • Can be stored at room temperature for 3 days.

 I am back. 
After 15 days of  break. Thanks friends for being concerned about me. I was really overwhelmed when I received mails asking  if everything was ok with me. Thank you for caring.
 This break has was the much needed one. I had too much going on since last six month at personal as well as professional front. It had started  taking a toll at my health. But now we are sorted & back with much energy & load of recipes.
Well how do you like the little changes in the header.Would love your feedback. I mostly like light & pastel colors. But K  insisted I should atleast put some color to my blog. We had atleast 15 designs going on & off. His suggestion its too plain. Add some brightness.  My opinion not to bright.  If it hurts my eyes how will the readers take it.  Well this time ,  no every time he wins his way with me. But lets settle  on that I am just giving it a shot. If I am not comfortable , its in my hands to change. 
Loads of talking done. Such an introvert & silent person talking too much.  I think  I have caught a bug from Rafee after doing her last post. 

Now to todays post for this beautiful Caramel Cuppies. Please bear with the photographs. It is taken at night on my kitchen platform with only two left  & that also waiting  to be eaten.

I used cake mix to prepare the cupcakes And filled it with delicious caramel sauce.

Topped with fresh cream & some caramel sauce.

These cake mixes come in handy when you have shortage of things at home. Many recipes can be whipped up in little time.
Ingredients
For Cupcakes (12 cupcakes)
250 gm cake mix
2 eggs
1/3 cup oil
1/2 cup water
Caramel Sauce:  Makes about a cup. (will update step by step pic soon)
 1/2 cup sugar + 1/2 tsp water
3 tbsp butter
60 gm cream.
Stiffly whipped cream about 2 cups for icing.
Method for cupcakes:
  1. Prepare the cup cake mould with liners
  2. Mix in the wet ingredients: eggs + oil + water
  3. Add in the cake mix & beat till well combined.
  4. Pour the batter till half the liners.
  5. Bake at 180 degrees till 10 minutes till done.
  6. Completely cool on wire rack.
Method for Caramel Sauce
  1. In a heavy bottom pan bring sugar & water to heat till it changes it color to light brown.
  2. Add in butter.
  3. Once the butter melts,remove from flame & add in cream. Stir continously
  4. The mixture will be foamy at this point.
  5. Again put in on flame & cook for a minute.
  6. Cool & ready to use.
  7. Can be kept for upto 2 week in an airtight container.
Assembling the cuppies.

  1. Once the cupcakes have cooled down. Make a hollow in the center with a knife.
  2. Fill this hollow with caramel sauce
  3. Decorate with whipped cream with the drizzle of caramel sauce.
  4. Chill before serving
