Rasmalai is one of my favorite all time desserts. While the  original recipe of Rasmalai  is quite elaborate and time consuming. This one is shorter and as the name Instant Rasmalai. Chicken Amrawati  is too easy to make. Gather your ingredients and drop it in the heated oil. Pan cook or Pressure cook are the options available.

A simple chicken curry from the vidharbha region of Maharashtra

Ingredients

  • I
  • Marinate the chicken with the following:-
  • 500 gm Chicken  with bone or boneless chicken
  • 3 tbsp Garlic Ginger Paste
  • Onion Paste: 2 medium size (Grind into paste)
  • 2 tbsp Curd
  • 1 tbsp red chilly powder
  • 1/4 tsp turmeric powder
  • 1 tbsp Coriander Powder
  • 1/4 tsp garam masala powder
  • salt to taste
  • II
  • 1/3 cup oil
  • Whole Garam masala (3 black pepper corns, 2 cloves, 1 black cardamom, 1/2 inch cinnamon stick)
  • 3 green chillies
  • 2 tbsp chopped coriander leaves + 1 tbsp coriander leaves

Instructions

  1. Marinate the chicken with all the above mention ingredients in I
  2. Now heat oil in a deep pan. When hot add 3 whole green chillies and whole garam masala.
  3. When it crackles add the marinated chicken. Stir till mixed
  4. Add the chopped coriander leaves.
  5. Cover & cook on a moderate heat till chicken is tender and oil separates
  6. Serve with roti , khubz or rice.

Notes

This curry can be prepared in pressure cooker also. Only need to use the pressure cooker and follow the same procedure from step 2, Give 3 - 4 whistles.  When cool remove and cook till desired consistency. Garnish with coriander & serve.

Saffron & Cardamom Bars

Like Vanilla & Cinnamon are essence of any dessert in the west ,Saffron & Cardamom are hearts of any sweets in India.
 The combination of saffron & cardamom are heavenly.


I try to incorporate these two flavors in each dessert as K loves these flavors.

This melt in mouth bars are addictive . Simple & easy to prepare & a crowd pleaser.

Serves : Approx 12 -14  Bars (depending on the size of your tray)
Ingredients

I
75 gm self raising flour
1  egg
4 tbsp sugar
3 tbsp unsalted butter
3 -4 Green Cardamom crushed ( We only want seeds)

II
210 gm Cream Cheese
2 eggs
1/2 tin Condense milk
1/2 tsp crushed saffron.

 You will need an 8 inch Baking tray.

Method

  1. To prepare the base, mix together ingredient I & spread it out evenly on a tray.
  2. Now in a separate bowl mix ingredient II.
  3. Pour over the prepared cake base.
  4. Bake at 180 degrees for 30 minutes or till the toothpick inserted comes clean.
  5. Cool completely.Cut into squares before serving
  6. Consume within 3 days.
Note: For best square bar results put it in freezer for 20 min before cutting.
