Muslim Naan has its origin in Western Asia & is available in Gujarat & some parts of Maharashtra. It is also known as Sheermal in Hyderabad. Muslim Naan

When you come across the word Naan, the picture of butter naan or tandoori naan comes to mind. But this  Muslim Naan is not at all the same in taste nor in texture. Whenever  Qalia was made, ammi used to order this delicious naan from bakery.  This circular discs are little on the sweeter side and come in 5″, 6″ or 8″ diameter.  One can find many roadside vendors selling it during the month of Ramadan.Traditionally , Muslim Naan is cut into 4, 6 or 8 parts (depending on the size) & mostly eaten with thin gravy of meat  curry or chicken curry . The horn of the milkman in the early morning was the call to get up and take the freshly squeezed cow milk. Our milkman patel kaka supplied the best cow milk. No mixing of water just pure milk. Once the milk was boiled, cooled and rested in fridge for few hours, it would form a  half inch coat of balai aka cream. Balai would be removed and stored in a separate container. This process would continue for fifteen days to make ghee or sometime butter for cakes. Mostly ammi used to tell me to make ghee. The remaining brown crumbs after straining ghee were also kept. Ammi used to add it to different kinds of halwa. Specially aate ka halwa or a mix of sooji aur aate ka halwa.  Continue reading

When wrapping the things at my Ammi’s place in January , I came across  pages and notes along with real old urdu recipe book. With torn pages & ink marks were the reminders of the time it had been written.  Ammi had a habit of writing different recipes. It may be her own or  from Radio, TV and also from  friends with little notes of her additions. I don’t know what is the source of her recipes but now it has become a precious thing for me to keep in my diary. These are the memoirs for me to keep. I have her old letters written to me when I came to Dubai. They are simply papers and things written for anyone, but for me these are my valued possessions. Continue reading
