Ande Ka Salan / Egg Curry

Ande Ka Salan / Egg Curry , a delicious curry from the region of Maharashtra. The spices used in this curry makes it different from the regular egg curries.

Ande Ka Salan / Egg Curry  was mostly made as a substitute for meat curry. When there was no meat in house , our family would prefer eating this salan instead of having vegetables.  After coming to Dubai , this salan is part of  our weekly meals.

This salan uses two types of masala.: Tala hua Masala & Thanda Masala. Now tala hua masala is pan fried onions in little oil. And then grounded to paste with ginger garlic and whole spices. I have shared the entire process Tala Hua Masala in this post. But I am planning to do a separate post for it. As this masala can be stocked up in fridge about a month. And I use this masala to prepare in other curries too.
Ingredients
I
2 hard boiled eggs
4 tbsp of oil
II :
1 big size onion roughly sliced
1/2 tsp of oil
3 cloves of garlic
1 inch ginger
3 pepper corns, 2 cloves,1/2 inch cinnamon,
III
1/2 tbsp of red chilly powder
1/4 tsp of turmeric powder
1/2 tsp of coriander powder
salt to taste
1 cup water
IV
2 tbsp coriander leaves chopped
1 green chilly sliced
Method
  1. In a nonstick pan, heat 1/2 tsp oil.Add the sliced onion & fry on medium flame till brown. Cool & grind to paste with ginger, garlic,pepper,clove &  cinnamon. (II)
  2. Heat 4 tbsp oil in a pan.  Fry the eggs till light brown on a slow flame. Remove & keep aside. (I)
  3. Now add in the fried masala and stir it for few minutes.(II)
  4. Add in red chilly powder, turmeric powder, coriander powder & salt. Fry for few minutes
  5. When the oil starts releasing from the sides add water & the eggs.Cook for few minutes till the desired consistency. Add the thanda masala
  6. Garnish with coriander & green chilly.
  7. Serve with rice & roti with onion
