Raw Mango Chutney

Raw Mango Chutney  is a spicy , tangy chutney made up of green mangoes. Eaten usually as a side dish of a vegetarian meal, this chutney is a treat for mango lovers.
The season of mangoes has started and all the blogosphere are coming up with  innovative mangoes dishes. So thought to share with  you all our all time favorite Raw Mango Chutney . This chutney is usually paired with  paratha’s , sandwiches or as a side dish to a vegetarian meal.

I remember my Badi Phuphi making this chutney on sil batta (type of pestle & mortar). She was very fond of spicy food. At that time, I used to run a away mile away when loads of chillies were used in a dish. And she used to tease me and  say, the flavors of this chutney won’t come out if chilly is not used. And we are using jaggery to soften the spiciness . So what changed in those years and why I love this chutney now.
Well, I got married. In a region where chillies are consumed a lot. Where chillies are the base of a dish. This happened. And now , I am teased by her, Ab kya hua (what happened now) ab kaise itni mirchi kha leti ho ( now how are you able to eat so much chilly) And I say, marriage happened. hehe.

Raw green mango  is used for this recipe. Try to use the sour mangoes for good chutney.  Other than that , this recipe uses simply pantry ingredients like cumin, garlic, and mint. The quantity  of mint used very less. We don’t want the flavor of mint to overtake mangoes. Jaggery is added to balance the sourness. Sugar can be substituted with equal amount of jaggery.

Ingredients

  • 3 small size raw green mango
  • 1 big size garlic clove
  • 2 Whole red chilly
  • 1/2 tsp salt
  • 2 -3 tsp jaggery
  • 1/2 tsp cumin
  • 4 mint leaves

Instructions

  1. Grind the all above ingredients into fine paste.
  2. Store in a airtight glass container in freedge

Notes

This chutney can be stored for 1 month in fridge.
