Palak Pulao / Spinach Pulao is a one pot meal. Served with plain buttermilk  Palak Pulao is packed with nutrients and serves as delicious meal in a hurry.

Using the spinach as a main ingredient, I share with all my readers  the  recipe of Palak Pulao. This nutrition packed pulao is for kiddies to biggies. Specially for people who hate green leafy vegetables. 
 The recipe to make Palak Pulao is easy. Start the process by preparing spinach paste. Take about  1 tbsp oil in a pan. Add in the chopped onion and saute till transparent. Later add spinach.Cook on medium heat till spinach changes its color and the water seeps out. Remove from flame. Cool ground to paste. The next paste to  prepare is  by grinding together coriander leaves, green chillies,  garlic paste , ginger paste  with curd. These two pastes are base of  this  Pulao 
I use Pressure cooker to make all kinds of Pulao. The reason being all the  masalas get coated on the rice  giving a rich aroma & flavor.

Ingredients

  • 1 Glass rice
  • 1 bunch spinach
  • 1 large onion chopped
  • 1/3 cup coriander leaves
  • 2 green chillies + 3 extra
  • 1 tbsp garlic paste (5-6 garlic cloves)
  • 1 tbsp ginger paste ( 1 1/2'' ginger)
  • 2 tbsp curd
  • 1/2 tsp black pepper powder
  • 1/2 tsp garam masala powder
  • Whole garam masala (Shahjeera,cloves,black pepper, cinnamon,black cardamon,Bay leaves)
  • 1 big spoon oil + 1 tsp ghee (opt)
  • 1 & 1/2 tsp Salt to taste
  • 1 & 1/2 glass of water

Instructions

  1. Blend all together : coriander leaves, 2 green chillies, garlic paste, ginger paste, curd
  2. For Spinach:Take 1 tbsp oil in a pan. Add 1/2 chopped onion. when it becomes transparent, add the spinach.Cook on medium heat till spinach changes its color.Cool & ground to paste.
  3. Heat oil in a deep pan or pressure cooker. When oil is hot, add whole garam masala.
  4. When garam masala crackles, add the remaining chopped onion.
  5. When onion becomes light brown, add the Coriander paste. Fry it for 2 minutes
  6. Add black pepper powder & garam masala powder.
  7. Add spinach paste
  8. Now add slit 3 whole green chillies.
  9. Add the water and salt.
  10. When water comes to a boil, add rice.
  11. Pressure cook on high flame till 3 whistles and then on simmer on low heat for 10-15 minutes.
  12. Serve hot with curd raita.

Notes

I use the pressure cooker method for all kinds of Pulao. Reason.All the masalas get coated on the rice and flavour is awesome. And please adjust your water quanity depending on the rice quality. New rice less water, old rice more water.
