I love combining my chicken with oranges.
 

Grilled with capsicum, onions & tomatoes

Served in a platter with tahini yogurt dip & fries

  How could I forget stuffed olives

 

A Complete meal…….

 

Serves  2 -3
Ingredients

For the Marination:
500 gm chicken breast cut into cubes
1/2 tsp red chilly powder
1/4 tsp turmeric powder
1/4 tsp coriander powder
1 1/2 tsp of tomato paste
1 tbsp salt
juice of 2 oranges
1/2 tbsp olive oil

More oil for basting while grilling about 2 -3 tbsp.
Capsicum , onion & tomato cut into cubes
8 small size bamboo sticks or 4 long sticks

To Serve:(OPT) Potato Fries,olives & Tahini Yogurt Dip

Method:

  1. Marinate the chicken with marination ingredients. Keep aside for minimum 30 minutes.
  2. Cut tomato,onion & capsicum into cubes
  3. Insert the onion, tomato,capsicum & chicken on the stick. Repeat the same order till the bamboo stick is full.
  4. Grill on a preheated oven @ 180 C for 45 minutes or till done.
  5. Serve with Tahini yogurt dip, fries & olives

WHAT TO COOK?? 


 There are days when I stare at my fridge looking for answers what to cook. Yesterday was the one of them.

My fridge stared back with 3 pcs of cauli-flowerets, tomato, 1 big potato, 1 small capsicum &  2 brinjals .Freezer stocked with frozen peas.

Two minutes already gone.O.k thought to sum up all of them and make a fry in 10 minutes. To be served with roti. 

Ingredients:-

3 pcs of cauli flowerets
1 capsicum cubed
2 brinjals sliced
1 big potato sliced
1/4 cup frozen or fresh peas
1 onion cubed
1 tomato cubed (pulp removed)
1 tsp  red chilly powder 
1 tsp coriander powder
1/4 tsp tumeric powder
3 pinch amchur powder
1/2 tsp salt
oil for deep frying 
2tbsp oil
1/2 cup chopped coriander leaves
2-3 green chillies sliced

Method:
  1. Deep fry cauliflower, Potato & Brinjal  OR  Mix in 1 tbsp oil & grill them in oven at 170 degrees  for 5 -6 minutes
  2. Heat 2 tbsp oil in a wok(Kadai or deep pan) . When oil is hot add in all the vegetables
  3. Mix in tumeric, salt, red chilly powder & coriander powder.
  4. After adding all the dry masala, stir well.Then add amchur powder (dry mango powder).
  5. Now add in cubed onion, capsicum & tomato. 
  6. Mix all the above on medium flame till all the masala has coated on the vegetables.
  7. Add chopped coriander serve hot with roti

Chicken Shashlik

Shashlik ( This word originated in Ukraine ) means a  dish consisting of marinated cubes of chicken, lamb,beef  oR paneer grilled in oven or roasted on a fire.The marinated  meat cubes is inserted on a bamboo stick or skewers along with slices of capsicum, onion, and tomato.
It is also called Shish kebabs. 

INGREDIENTS:-

 200gms   Chicken breast  cut into cubes (approximately 1 cup)
1 Onion, 1 tomato & 1 capsicum cubed
Oil for brushing
6 – 7 Bamboo sticks
MARINATION:-
2 tbsp       Curd
1              Lemon
1tsp          Ginger Garlic paste
1tsp           Red Chilly powder
1/4tsp        tumeric powder
1/2tsp       coriander powder
1tsp         tandoori masala (optional)
1 tsp           Garam Masala Powder
1 tsp           Oil
Salt to taste

 METHOD:-

  1. Marinate the Chicken with all the marination spices
  2. Mix well with the Fork and keep it in fridge for minimum 2 hours(overnight is best)
  3. Now take a bamboo stick and insert first cubed capsicum, onion, tomato and chicken.Repeat till the entire stick is full. Repeat the process with all the sticks.
  4. Grill on a pre heated oven at 200 degrees for 50 – 60 minutes.Keep brushing from with oil on both sides.The vegetable will shrink a little and chicken little browned when ready.
