Suji aur Gud Ka Halwa/ Semolina & Jaggery  Halwa is a traditional Indian dessert. In many places in India, this halwa is eaten in combination with puri.

Suji aur Gud Ka Halwa/ Semolina & Jaggery  Halwa is the most prepared halwa at my home. Reason being it’s easy as no special ingredients are required. Can be said all the ingredients are easily available in an Indian household. It takes maximum of 15 minutes to prepare. And foremost it is loved by everyone.

Rather than cakes or cookies, halwa’s are more favorite in our home.  K is a total gaurani ( desi guy). And favors much of Indian sweets rather than international. This is the reason you will find lots of Indian desserts  in my blog. And the one thing that is always there at my place is halwa. Any halwa may it be. A little bite of sweet is must after every meal.

I usually prepare this halwa in desi jaggery. It gives a subtle flavor and is good for health rather than sugar. We start by roasting the halwa in ghee on a moderate heat. Continuous stirring is required for this halwa as semolina will burn. The success of this recipe lies in roasting of suji. Now there are many types of suji available in market like very fine or chiroti rava. This recipe can be made with either of them. Just remember to roast it properly. And that also at a moderate heat to extract all its flavors.

Ingredients

  • 1 cup Sooji/Rava/Semolina
  • 1/2 cup Ghee
  • 1 cup jaggery
  • 1 & 1/2 water
  • 2-3 cardamom crushed
  • 1/2 tsp rose water
  • 1/4 cup mixed nut (cashew, pistachio,almond,kishmish)

Instructions

  1. In a deep pan mix together jaggery, cardamom & water. Heat so jaggery dissolves. Keep aside
  2. Heat ghee in a heavy bottom kadai or non stick pan
  3. Add in suji. Roast till brown in color
  4. Add in the nuts.
  5. And stir till nuts are little brown.
  6. Now add jaggery water.
  7. Cook till all the water has dried & mix starts leaving the sides of pan
  8. Now add rose water & give a final stir.
  9. Garnish with some nut (Optional)
  10. Serve Warm.

Notes

Can be stocked up to a month in airtight container for a month
