Yes, you have read it correctly. There is no butter nor oil in this recipe. And top of it no sugar. It looks beautiful.  I have fallen in love with this picture and with this roll. Lol. I am totally going nuts over this Stove Top Chocolate Swiss Roll . And I can promise , you will be too. This is my second version of Swiss roll. The first one was vanilla swiss roll with strawberry filling. You can find the recipe here.

I have made this using pistachio, almond and hazelnuts. And believe me the flavors are amazing. But I have observed people are always looking for chocolate based recipes more. So I am  posting this one first. So let  me explain this process first.

Eggs:  play a crucial roll in this recipe.  Can you see the sponginess, the texture of the roll. Well this is because of eggs. We are not using any raising agent in this recipe. So how much you beat the eggs to fluffier , double in size will give you the result.

Sweetener: I use honey as a sweetener for this recipe. But as always , the option of sugar is always there.  Same amount as honey.

Coco Powder & Flour: This is another important step. Either you fold in the flour or beat in. The process has to be quick.

Lastly the making: Use a flat nonstick girdle or pan. Square or round your choice. We grease the pan with little ghee. Just so it doesn’t stick to the bottom. And the flame is very low. When I say low, I mean real low. Cooking time is approximately 5 to 8 minutes.

How to check if its done: Touch lightly the top of the roll. If it sticks to your hand. Then need to cook more. And if it comes clean then you are ready to roll.

Rolling : Once the swiss roll is cooked. Remove immediately on a baking paper/kitchen tissue. Roll it. And keep aside for 3 to 4 minutes. Later unroll and fill.

Filling:  Option are unlimited. We love rasberries and cream with chocolate.  Strawberries, cranberries or any other fruit goes well. Mixed can fruit can be used. But discard all the water  and dry it out before adding to cream. After filling serve immediately or refrigerate for an hour or so & serve cold.

Ingredients

  • 2 large eggs
  • 2 tbsp Honey
  • 2 tbsp coco powder
  • 2 tbsp plain flour
  • 1/4 tsp vanilla essence
  • ghee for greasing
  • 1/2 cup whipped cream
  • 3 tbsp Rasberry conserve

Instructions

  1. Grease the non stick pan. Keep aside
  2. Beat the two egg till foamy
  3. Add in honey & beat till double in volume.
  4. Add in vanilla essence
  5. Sieve coco powder & plain flour.
  6. Fold the flours in the eggs.
  7. Pour over a prepared pan.
  8. Cook on slow flame covered for 5 to 8 minutes
  9. Once done, remove from pan & place on baking paper
  10. Roll it when hot.
  11. Once it cools down, open the roll
  12. Spread cream and rasberry conserve.
  13. Roll again & refrigerated for 2 hours.
  14. Cut and serve.
