In my initial days of marriage K used to tease me by asking if you know how to make this and that. He would often give regional names to the dishes I knew to confuse me.  Being from Gujarat with influence of northern indian indian cuisine, there was loads of language differences. And dishes including various things had different names from what we use. This Badshah Pasand had become a huge headache , I would say  for me. Until I decided to unravel it’s mystery by calling my ma in law.

This call to my amazement revealed the details of Badshah Pasand. My ma in law said , it is shahi tukda also called Badshah Pasand – Double ka Meetha.  In short  this is just another version of Shahi Tukda but without milk. Amazing. Just amazing. And here I was boggling my mind with what it is. That is another thing , that the next day I prepared it and kept in from of my dearest hubby. Boasting like a conqueror.

Badshah Pasand - Double ka Meetha This dish is very easy to make. And can be prepared under 10 minutes. That’s the biggest plus point of the recipe. As you can see in the picture itself, bread is core ingredient to this recipe. I prefer using normal bread. Milk bread in a no no as it does not give the required crispness. Stale or using fresh bread. It’s totally your option.

We start the process by cutting the edges of the bread. Later cut in any shape  square, triangle (i have) or rectangle. Shallow fry in ghee till crisp and brown. Drain on sieve and keep aside. In between prepare the sugar syrup. Later dip this bread in sugar syrup. Remove and garnish with nuts.  And ready is our juicy, crispy & nutty Badshah Pasand.

Ingredients

  • (I)
  • 7 to 8 pcs of bread
  • Ghee for Shallow frying
  • (II)
  • 1 cup sugar
  • 1/2 cup water
  • Rose syrup
  • cardamom crushed
  • (III)
  • sliced almond & pistachio for garnish

Instructions

  1. Cut the edges of bread. Later cut into triangles
  2. Heat oil in a pan. Fry the bread to crisp and brown.
  3. In another bowl mix sugar and water. Cook till sugar has dissolved. Remove from flame & add Rose syrup.
  4. Dip the fried bread in sugar syrup for 30 to 40 seconds.
  5. Remove and place in a serving dish.
  6. Garnish with sliced nuts and serve.
