When your dinner mostly consists of protein, be it eggs or meat. I have to stock up things which can be easily whipped up in a jiffy. I love freezer friendly recipes.  I know the debate in eating freshly made food and freezer food is never ending. I am also an advocate of fresh food. But when you work. You have to manage time. And believe me it is a boon after a long day at work,  when you know there is something stocked up in freezer.

Chicken Reshmi Kebab

Let’s talk about a today’s recipe Chicken Reshmi Kebab. As the name suggest reshmi mean soft/ mulayam in urdu. The texture of this kebab is soft, melt in mouth, succulent. I am not bragging. But the taste of this kebabs is amazing. The use of cheese and pure ghee makes the texture out of the world. Make it. Freeze it and eat it. Ingredients

  • 500 gm Boneless chicken cubes
  • 2 large Onion peeled & cut in 4
  • 4 to 5 green chilly
  • 6 garlic cloves
  • 1/2 bunch of coriander leaves
  • 10 mint leaves
  • 2 tsp white pepper
  • 1 tsp black pepper
  • Salt to taste
  • 1/3 cup melted ghee or oil
  • 1/2 cup mozzarella cheese

Instructions

  1. In a food processor jar using a chopper blade add onion, green chilly, garlic, coriander, mint.
  2. On the speed of one/two pulse to finely chopped.
  3. Take this mix in a cheese cloth and squeeze out all the liquid.
  4. In the same jar, add the chicken cubes & chopped mix.
  5. Churn to form a combined chicken paste.
  6. Remove the chicken mix in a bowl.
  7. Add the white pepper, black pepper, salt, ghee & mozzarella cheese. Mix all
  8. And shape in to oblong kebabs.
  9. Shallow fry & Serve.

Notes

After shaping the kebabs, lay it on a tray with one inch apart. Freeze it. Once done , Remove & Store in plastic bags. Use as required. Can be stored upto a month
